Egg in a Nest

I have been trying to cook a lot at home lately especially healthy and protein rich dishes. This dish i actually learned from a roommate of mine who belongs to southern part of India.I made some changes to the recipe to enrich the taste more and according to my pallet. Everyone at home loved this recipe , and i have some hardcore critics at home. This recipe is simple and the whole process just takes 30 min.

Chop Chop Chop…Off to cooking now !!

Ingredients:-
Eggs - 6 large ( or depending on the size of skillet )
Butter - 2 Tbsp (or Olive oil if you want to be healthy)
Tomato - 5 Purred
Onion - 1 Large (cubed)
Garlic - 4 cloves (chopped)
Curry Leaves - 4-5 large
Jeera - 2 Tsp
green chilly - 2 whole
Salt - pinch
Red pepper flakes- according to your pallet
Tamarind - 1/2 Tsp
Cheddar cheese
  1. Take a skillet and add butter and Jeera in it. Fry the jeera till it turns slightly brown.
  2. Now add chopped onions, curry leaves, and garlic. Fry the onions for about 5-7 min.
  3. Add Onions and green chilies and let the curry simmer for about 10 minutes, so that the paste becomes a little thick.
  4. Once puree becomes a little thick then add tamarind, salt, and red chilly flakes. Stir in the ingredients.
  5. Create cavities in the puree and break one egg at a time ( Like shown in the picture). After putting in all the eggs. Sprinkle the cheese on the top and cover the skillit with the lid and keep it on low flame. for about 7 min.
  6. Now check on the eggs and poke with a tooth pick and see if the egg still has a runny egg yolk.Once the egg yolks have been cooked.Put out the stove.
  7. Serve with any kind of bread or eat it as a snack.
